Vanilla and Chocolate Mini Bundts.I recently found out, thanks to Months of Edible Celebrations' cool food themed calendar, that Sunday 15th November was National Bundt Day. And (as if I needed any more encouragement!) The Food Librarian has been bombarding my Google Reader with an amazing looking bundt cake every day for the past month to inspire me! (and had me in stitches at her 'I like Big Bundts' logo/slogan! So funny!). I took the hint and bought a bundt pan, and (because we are a two person household and can only eat so much cake) I also opted for two little individual pans. So in honour of Bundt Day, I made my first ever bundts - a mini vanilla bundt with white chocolate icing, and a mini chocolate bundt with milk chocolate icing. Just enough for two peeps to enjoy without the risk of their bundts butts getting huge! ;)
But I look forwards to baking my first full-sized bundt over the festive period when there are people to help us eat it all!
Now, I wonder how long it will be until I stop singing "I like big bundts and I cannot lie....." ALL. DAY. LONG?!? That pesky Food Librarian! ;D

I like little bundts and I cannot lie! The icing drips so perfectly down the little cakes. It reminds me of those cakes the Smurfs used to have, which also were beautifully iced...

Have you ever heard of a Sock-It-To-Me-Cake. It makes a GREAT bundt cake and guess what, you use a mix!!! Believe me, it's a close call from mix to scratch in this instance. I posted the recipe on my blog. Here it is a "gift" for you: (from Duncan Hines:)
1 pkg. Duncan Hines Butter Recipe cake mix
1 c. finely chopped pecans
2 Tbsp. brown sugar
2 tsp. ground cinnamon
1 c. sour cream
1/3 c. vegetable oil
1/4 c. sugar
1/4 c. water
4 large eggs
1 c. confectioners' sugar
2 Tbsp. milk
Preheat oven to 375 degrees. Grease and flour a 10" tube pan.
For the filling, combine 2 Tbsp. cake mix, pecans, brown sugar and cinnamon; mix well. Set aside.
Combine remaining dry cake mix, sour cream, oil, sugar, water and eggs in a large mixer bowl. Beat 2 minutes at high speed. Turn 2/3 of the batter into the prepared pan; sprinkle with filling. Spoon remaining batter evenly over the filling mixture.
Bake 375 degrees for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a rack for 25 minutes; remove from pan.
For the glaze, blend together confectioners' sugar and milk; drizzle over warm cake. 12-16 servings.
